Apart from the heating element, an electric kettle also comprise of a thermostat that controls the heating element. The higher you set the temperature, the lower the resistance is. A small current runs through the thermostat, usually controlling an electronic switch called a transistor.
At time when the resistance has greater value, the flow of current reduces thereby reducing the current flow in the heating element. This causes the heating element to cool. Further the water also gets cooler. On the other hand, if the resistance has less value, more current flow through the thermostat and the transistor. Thus, you are provided with the warm water.
